Mini Quiche Egg Bites

Good morning MF’ers!  Here’s a quick and easy breakfast recipe that you can make on a Sunday, refrigerate, and then eat throughout the week! Not to mention they’re absolutely delicious. Let’s get right to it.


INGREDIENTS:
6 eggs
1/2 of a red pepper
1/2 cup cooked spinach
3 cooked slices of bacon
Cheese (optional)
Muffin tin

DIRECTIONS:
1. Preheat oven to 375.

2. Crack 6 eggs into a large mixing bowl and whip until fully combined.

3. Add peppers, spinach, bacon and cheese. Mix thoroughly until everything is combined.

4. Butter or spray your pan. Evenly distribute egg mixture into a muffin tin.

5. Cook for 18 minutes or until fully cooked.
