Love Buffalo Chicken Dip? Here is a healthier spin on it with a bit of a crunch. These were done in my toaster oven. I have also roasted on the grill with some parchment paper underneath. Cauliflower was compliments of my local farmer market, Rennigers, in Royersford, PA. Super delish!
Buffalo Cauliflower Bites
Ingredients:
- 1 large head of cauliflower, stems removed, and cut into small pieces
- 1/2 cup hot sauce…(I used Franks Red Hot Sauce)
- 5 Tbsp. olive oil
- 1 Tbsp. Coconut Aminos
- 1 tsp. apple cider vinegar
- ½ tsp. garlic powder
- ¼ tsp. cayenne pepper (optional)
- Parsley or green onions, chopped (optional)
How to:
Preheat oven to 425 degrees.
Mix together the hot sauce, olive oil, coconut aminos, apple cider vinegar, garlic power and cayenne pepper. Place on stove top until simmers. You may have to wisk it a little bit.
Place cauliflower in a large mixing bowl. Toss half the sauce over top and mix to coat evenly.
Place on cookie sheet in single layer and roast for 10 minutes. Turn and roast for another 8-10 minutes.
Pour remaining sauce over cauliflower when done.
Can serve with ranch or blue cheese dressing to dip, but it’s awesome all on its’ own and you’ll pass on some calories without it!
