Summer Watermelon and arugula salad

Continuing with the wonderful fruits and veggies from our local Renninger’s Farm in Royersford, PA!!!  This week I tried a new refreshing salad.  The watermelon from Renninger’s is something I look forward to each summer!  It’s amazeballs!!!

This one was totally experimental and also easy, simple and delish!

Ingredients:

1/2 a medium watermelon

2 T white balsamic vinegar ( I used a Lemon Balsamic, but if you can’t find use the juice from a half a lemon or lime)

1/8-1/4 C of good olive oil, cold pressed for sure

1-2 T of local honey, depending on how sweet your watermelon is, start light and add if needed.

1/4 c Feta cheese

1/2 bag of arugula

1/4 c fresh mint, ripped into pieces

Salt to taste, optional

Get er done!

Mix the vinegar, oil and honey together.

Cut watermelon into 1″ cubes.

Mix everything together into a large bowl.  Be careful not to over stir.
